For the people who really enjoy a good, hot and spicy meal, this is indeed a paradise.  From the region of Khandesh in Maharshtra, this zesty recipe is now a favourite across many regions across the state. Khandeshi Mutton Rassa Masala is hot, spicy and filling delicacy, usually enjoyed with bhakris or chapati/phulkas. With Prakash Khandeshi Mutton Rassa Masala made of spices like pepper, fennel and cloves, you are sure to have a tasty treat with added health benefits.

Ingredients: 500g. Mutton, 2 medium size onion, 3 tbsp. oil (approx. 40ml.) , ½ bowl sliced dry coconut (approx 30g.),  8-10 garlic cloves, ½ inch ginger (4g.), small bowl of freshly chopped coriander,  entire packet of Prakash Khandeshi Mutton Rassa Masala, 4½ cups* (approx. 700ml.) water, salt to taste. *(1 Cup = 150ml.)

Method for preparation of paste:
Roast coconut, onion, till dark blackish brown and grind to a fine paste with ginger, garlic and coriander.

Method for preparation of Khandeshi Mutton Rassa:
Ingredients: Chilli, Coriander, Bengal Gram, Coconut, Edible Common Salt, Sesame, Onion, Lichen, Cumin, Turmeric, Black Pepper, Cotton Seed Oil, Taj, Black Cardamom, Bay Leaf, Fennel, Clove, Caraway, Ginger, Star Anise, Green  Cardamom, Compounded Asafoetida, Mace, Spices And Condiments.

 1) Add 1 tsp. oil, 1 chopped onion, 500g. Mutton, 4½ cups of water and salt in pressure cooker. Cook for 4-5 whistles.
(approx 10-15 min.)
2) Heat oil in vessel, add the above paste and cook till the oil separates.
3) Add the entire packet of Prakash Khandeshi Mutton Rassa Masala and cook for 1 min.
4) Add the pressure cooked mutton and cook for 10 min. Serve hot with Bhakari.
